Ok i’m a nerd. Now that i got that out of the way this week may be crazy!!!!! I didn’t really know what to make next and was looking for ideas. So i asked the Cool Kiwi what i should make and the kiwi said to make pork tenderloin. I went to do my research and finalized on 4 recipes…. FUN FUN FUN!!! That means i’ll buy the pork tenderloin bulk from Sam’s Club and do a pork-a-thon.
Here are the list of what i’m gonna cook
Pork tenderloin with roasted apples and onions
Pork tenderloin with balsamic-cranberry sauce
Pork tenderloin with pomegranate sauce
Pork tenderloin with sauteed onion and fennel and fennel cream
Pork chops with cranberry, port, and rosemary sauce
O wait… that’s 5!!! Soooo YEA!!!!!! GAME ON!!!!
As you can tell there isn’t much to pork tenderloin other than the sauce. I was telling another Kiwi that pork tenderloin = sauce or spice rub. How you cook the tenderloin is pretty much standardized.
To complement the dishes and for color+plating i’m gonna eat each with either, green beans, red potatoes, or sweet potatoes. Sooo yea.. Maybe i’ll throw in some broccoli. Haven’t decided yet.
Though it may look like i’m making a lot of different dishes, they are all pretty simple. I only have to buy 5 ingredients total (not including the pork and the side dishes) . Most of the other stuff are spices and herbs and random stuff which everyone should have. Soo…. everyone look forward to that. I didn’t forget the lava cake. I’m gonna make that as soon as i become unlazy.
I forgot to give credit to Emma in the video of the most amazing marching band ever. Emma was part of that band and if you look really closely was in the flag at the end for the mario theme song. Sooooo go Emma! Say hi to An*nth…..
YAY!! We finished our paper! Basically we were sitting at our advisor’s house waiting for the other advisor to send us corrections. Writing “meaningful crap” is hard! It takes a big bull to make ……
Anyways only 1 more day till i go home and see my friends back home. YAY! We’re gonna eat crazy places i think this time before i have to come back. O yea and i’ll get to eat my sacred falafel king!!!!!! OMG i always get a helping of falafel king on 3rd st whenever i go. There hasn’t been a time i didn’t get it…. FALAFEL + ZUCCHINI CHIPS = *****HALO MUSIC****
Also good news is i got upgrade again to first class on my DTW to LAX flight. That means free food!!! THANK GOODNESS THERE’S SILVER!!! Hopefully i can get sent somewhere else this year and qualify for it again. I’m only like 5k away. I got most of them for the conference in Greece ehheheheh. Hopefully for Christmas i can make a quick stop somewhere and get more points.

Today i went to see the Los Angeles Guitar Quartet with a bunch of people from the lab. It was only 2 hours only but it was great. I did though leave one member of the Fobtastic 5 in the office working on the paper sorry Mr Fobtastic. Anyways the Los Angeles Guitar Quartet was actually pretty good and enjoyable. It’s nice that Ann Arbor gets a lot of good concerts every year. I do have to warn people listening that the music was pretty soothing and nice and may put you to sleep but in a good way.

So in Sparta we eat Beef Gyros(I was going to call them souvlakis but i decided it was more a Gyro than a Souvlaki). Not just any Beef Gyros but Mark’s Beef Gyros! Gyros should really be made with Lamb but i didn’t have anymore Lamb so i used Beef instead. I cooked a large piece of meat but i only used like half of it to make my Gyros. Oh man the Tzatziki was Awesome! I think it would be even more awesome with some dill but i used only mint but it was great! Ohhh it wasn’t the best Gyros in the world but it was actually a really decent Gyro. The best i had was when me and one of the Fobtastic 5 went island hopping in Greece. While waiting for the boat to the next island we had some Gyros… OMG THAT WAS THE BEST 2 BUCKS I SPENT!!!!! If you travel to Greece try whatever the tourbook says once and then go for the stuff the real people eat.

The ingredients may seem long but really they aren’t
For the Tzatziki
1/2 Cucumber Peeled, Seeded, Chopped and Drained
1 Cup Plain Yogurt, Drained (I kinda skipped this one because I was lazy but you should it’s better)
2 Teaspoons of Fresh Lemon Juice
2 Teaspoons of Minced Garlic
Bunch of Mint chopped (Maybe a handful?)
2 Teaspoons of Oregano
1 Tablespoon of Olive Oil
For the Greek Salad
Couple leaves of Romaine Hearts torn into pieces (I used romaine leaves which i had)
Handful of Mint leaves chopped
Handful Cherry Tomatoes or Grape Tomatoes halved
1/2 Seedless Cucumber sliced into disks
Handful of Kalamata Olives
2 Tablespoons of Lemon Juice
1/4 Cup of Olive Oil
Flat Pita Bread
For the Beef
1 Steak or however much you want (You should really use lamb though)
Lemon Juice
Oregano
Minced Garlic
Olive Oil
So basically there a couple parts to this. You can do them somewhat in parallel. First I seasoned the Beef. I put the Lemon Juice, Oregano, Garlic and Olive Oil in a bag and threw the Steak in and let it bounce around to coat the whole thing and left it to the side while i turned the broiler on. Then i threw in all the Tzatziki ingredients in a blender and blended it all. That’s basically all there is to do with the Tzatziki. Just throw it in the fridge while you wait. Then i made the Greek Salad. Just throw together all the cut pieces of veggies. Don’t put the lemon vinaigrette yet. Wait till the meat is done to do that. Then when the broiler is ready throw in the meat. I let it sit in there for about 7-8 minutes on each side to get a medium-rare. Take out the beef and slice it into thin slices and let it sit in it’s juice again. Throw the pitas
in the broiler too so they get nice and soft and warm. Throw the Greek Salad Vinaigrette in the Salad and then put together your Gyro. I put the meat then the salad then poured all the Tzatziki over it and wrapped it up in aluminum foil. Bon App! (This takes a little longer than most of my recipes. Probably 20-25 minutes total)
